Vegetable Pulav


Today I made vegetable pulav and cucumber raita for lunch - a simple and delicious recipe.
This is also healthy - will make us eat lot of vegetables, which is good for health. Also, the yoghurt in raita is good for the stomach and gives a cooling effect.
Here is the recipe, hope you get inspired to cook. Enjoy.

Vegetable Pulav

Ingredients:

Basmati rice - 2 cups.
Vegetables - 1 cup. I used some peas, carrots, beans and green bell pepper.
Green Chillies - 2 slit.
Onions - 1 medium sized finely chopped
Cumin seeds - 2 teaspoons
Cardamom - 2 pieces.
Cloves - 2 pieces.
Cinnamon - 1 small piece.
Ginger - a small piece.
Garlic - a small piece. (optional if you dont like it)
Cilantro (for garnishing) - finely chopped.
Ghee - 1 tbsp. (optional if you want to avoid clarified butter)
Salt to taste.

Recipe:

Heat a large sauce pan and add ghee. Add the cinnamon, cloves and cardamom followed by the cumin seeds. Wait until the cumin seeds turn brown. Now add the chopped onions, green chillies and the ginger garlic paste. When the onions turn golden brown, add the other vegetables and cook until half done.

Wash the basmati rice and drain the water. Now add the rice to the cooked vegetable mixture and saute for 2 minutes. Add salt now and mix well. Add 3 cups of water for two cups of rice. This 1:1.5 proportion works well for pulav without lumps. Transfer the contents to an electric rice cooker and cook.

When pulav is cooked, transfer contents to serving bowl, garnish with chopped cilantro. Serve hot with raitha.


Raitha


Ingredients:

Plain Yoghurt - 1 cup.
Cucumber -1 - peeled and chopped.
Cumin powder - 1/2 teaspoon.
Cilantro - finely chopped to garnish.
Salt - to taste.

Recipe:

Beat the plain low fatyoghurt well and mix it with cucmber. Add salt and mix well. Now spray the cumin powder and top it with cilantros.
